Warm chocolate lava cake that has been sliced open, revealing a thick, glossy, and indulgent dark chocolate center flowing onto a matte silver plate. This is one of those recipes that looks too simple to trust. Just three ingredients, and somehow you are supposed to get a molten chocolate centre.

Ingredients

  • 200g dark chocolate
  • 2 eggs
  • 30g sugar

That is it.

The Method

  1. Melt chocolate gently
  2. Whisk eggs and sugar until slightly thick
  3. Fold chocolate into egg mixture

Pour into ramekins.

Bake at 200°C for 8 to 10 minutes.

  • Underbake and it collapses
  • Overbake and you lose the lava

The sweet spot is when the edges are set but the centre still moves slightly.


What Worked

Using good quality chocolate made a big difference. Cheaper chocolate gave a flat taste.
