Hojicha Basque Cheesecake That Is Not Overly Sweet

Burnt cheesecake is everywhere, but hojicha gives it a different depth.

This version focuses on balance and light bitterness.


Ingredients

  • 250g cream cheese
  • 2 eggs
  • 80g sugar
  • 1 tbsp hojicha powder


Method

  1. Mix everything until smooth
  2. Pour into lined pan
  3. Bake at 220°C for 25 minutes

The top should be deeply caramelised.


What Makes It Work

Hojicha adds:

  • A roasted flavour
  • Less sweetness compared to matcha
