Four dessert cups with pink jelly, white cream, and a peach scoop topped with dried flowers.

Summer in Singapore calls for desserts that are light, refreshing, and visually beautiful. That’s exactly what I was aiming for when I created these lychee rose jelly and coconut cream cups. The dessert has a delicate floral fragrance from rose, fruity sweetness from lychee, and the creamy coconut layer that ties everything together.

The first time I made these, I couldn’t stop staring at the vibrant pink jelly layered perfectly over smooth white coconut cream. They felt like the kind of dessert you’d order at a fancy café by the Marina Bay, but I made them on my kitchen counter with minimal fuss. The balance of flavors is subtle but addictive—refreshing enough to enjoy on a hot afternoon, yet sophisticated enough to impress guests.

Why This Works

Lychee has a natural sweetness that pairs beautifully with the floral aroma of rose. Coconut cream adds richness and smoothness without being heavy, and when chilled, the dessert is incredibly refreshing. Layering in transparent cups allows the colors to shine, making it perfect for summer gatherings or even an elegant brunch spread.

Ingredients You’ll Need

  • 200ml lychee juice
  • 2 tsp rose syrup
  • 2 tsp agar-agar powder
  • 150ml coconut cream
  • 1 tbsp sugar
  • Edible rose petals for garnish

Optional: fresh lychee pieces on top

Step-by-Step Preparation

  1. Prepare Jelly Layer: Mix lychee juice with rose syrup and agar-agar powder. Heat until dissolved, then pour into cups and chill for 1 hour.
  2. Prepare Coconut Cream Layer: Whip coconut cream with sugar lightly until smooth. Chill slightly to firm it.
  3. Layering: Pour chilled coconut cream gently over set lychee jelly. Chill another hour for the layers to fully set.
  4. Garnish & Serve: Top with edible rose petals or fresh lychee pieces. Serve cold for maximum refreshment.

Pro Tips

  • Make sure jelly layer is fully set before adding coconut cream to prevent mixing.
  • Use rose syrup sparingly—it can be overpowering if too strong.
  • Chill for at least 2 hours or overnight for a fully set, café-worthy dessert.

These cups are perfect for hot Singapore afternoons or for sharing with friends during summer get-togethers. The combination of floral, fruity, and creamy layers makes them a standout summer treat.
