That was exactly how these Chocolate Marshmallow Cloud Brownies happened.


I originally wanted a simple brownie recipe. Something rich, chocolatey, and comforting. But once I saw a bag of marshmallows sitting beside my baking ingredients, I knew the brownies needed something extra.

Brownie Layer

  • 150g dark chocolate
  • 120g butter
  • 150g sugar
  • 2 eggs

  • 30g cocoa powder

Marshmallow Layer

  • 150g mini marshmallows
  • 2 tbsp cream

Once the brownie has cooled slightly, spread marshmallows across the top.


Place it back into the oven for a few minutes until the marshmallows puff and soften.

Don’t Overbake

The biggest brownie mistake is leaving them in too long.

Waiting is painful.

But chilled brownies cut much cleaner, especially with the marshmallow topping.


Add Salt

A tiny sprinkle of sea salt makes the chocolate taste deeper and stops the dessert from becoming overly sweet.


Serving Ideas

These brownies are best slightly warm.

The marshmallow becomes soft and stretchy, almost like a chocolate lava dessert.
