Honey Walnut Chewy Cookies at Home | Less Sweet Twist on the Viral Dubai Cookie 🍯✨

February 20, 2026

|

Twelve round, golden-brown honey walnut cookies cooling on a wire rack. Each cookie is topped with a large walnut piece, showing a soft, chewy texture and slightly cracked surface.

If you’ve seen the viral Dubai Chewy Cookies, you know why everyone is obsessed. Soft, gooey marshmallow shells, crunchy nutty centers, chocolatey indulgence. But sometimes that sweetness is a bit much, especially if you prefer something gentle, comforting, and a little more grown-up.

Enter Bernice’s Honey Walnut Chewy Cookies. Inspired by the Dubai original, this version is softer, slightly less sweet, and warmly nutty. The outside is still gooey, the inside is packed with toasted walnuts and honey, and a subtle hint of cinnamon rounds it all off. It’s perfect for tea time, cozy afternoons, or just a calm evening treat.

Think of it as the Dubai cookie’s wise, age-appropriate cousin.

Ingredients 🛒

For the Walnut-Honey Filling

  • 1 cup walnuts, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • 2 tablespoons cream cheese or mascarpone

For the Chewy Cinnamon Shell

  • 2 cups mini marshmallows
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon ground cinnamon

For Finishing

  • Powdered sugar, for dusting

Step 1: Make the Walnut-Honey Filling

  1. Melt butter in a pan over medium heat. Add walnuts and toast lightly until fragrant. Stir constantly so they don’t burn.
  2. Remove from heat and stir in honey and cream cheese until smooth. Let cool slightly.
  3. Roll into teaspoon-sized balls and freeze for at least 20 minutes. Freezing makes assembly much easier.

Step 2: Make the Marshmallow Dough

  1. Melt butter in a non-stick pan over low heat. Add marshmallows and stir until fully melted.
  2. Remove from heat and stir in cinnamon until smooth and lightly spiced. This dough will be stretchy and soft.

Step 3: Assemble the Cookies

  1. Grease your hands lightly with butter. Flatten a tablespoon of marshmallow dough into a small disc.
  2. Place a frozen walnut-honey ball in the center. Wrap the marshmallow dough around it and roll into a smooth ball.
  3. Dust lightly with powdered sugar for a clean, cozy finish.

Step 4: Enjoy!

Two large, golden-brown honey walnut cookies rest on a ceramic plate, one with a bite taken out of it. In the soft-lit background, a small jar of honey and a wooden honey dipper sit on a rustic wooden table.

These cookies are best eaten warm. The soft, gooey marshmallow shell paired with the nutty, lightly sweet center is comforting without being over the top. Leftovers store well at room temperature for 1–2 days and remain chewy.

Bernice’s Tips ✨

  • Work quickly with the marshmallow dough—it firms up as it cools.
  • Freezing the filling is key to easy assembly. Don’t skip it.
  • Swap walnuts for pecans or almonds if you like.
  • A dusting of cinnamon sugar instead of powdered sugar adds extra warmth and cozy vibes.

Why This Version Works

Bernice’s Honey Walnut Chewy Cookies are inspired by the viral Dubai classic but designed for grown-up tastes. Less sugar, more nuts, gentle spices. It’s indulgent, yes—but in a calm, comforting way that’s perfect for anyone who wants the fun of a gooey cookie without being overwhelmed by sweetness.
