I love desserts that feel playful.

Not everything needs to be a perfect slice of cake or a carefully decorated pastry.

Sometimes the best desserts are the ones that make you smile before you even take a bite.

These S’mores Chocolate Cookie Cups are exactly that.

They’re inspired by classic campfire s’mores — chocolate, biscuits, and marshmallow — but transformed into a dessert that works perfectly for Singapore kitchens.

No outdoor fire needed.

Just a muffin tray, some chocolate cookie dough, and plenty of marshmallow.

Why S’mores Never Get Old

There’s a reason s’mores have stayed popular for decades.

The combination is simple:

Crunchy biscuit.

Melty chocolate.

Soft marshmallow.

Every texture plays a role.

The concept of combining sweet, salty, and contrasting textures is something often explored in dessert development. Chocolate flavour itself comes from complex compounds created during cocoa processing, which is why different chocolates can taste fruity, nutty, or bitter.

The International Cocoa Organization explains cocoa processing and chocolate production if you want to dive deeper into where chocolate flavours come from.

Ingredients You’ll Need

Cookie Cups

  • 150g flour
  • 40g cocoa powder
  • 100g butter
  • 100g brown sugar
  • 1 egg
  • 1 tsp vanilla
  • ½ tsp baking soda

Filling

  • Mini marshmallows
  • Chocolate chunks
  • Crushed biscuits

Making The Cookie Cups

Cream butter and brown sugar until smooth.

Add egg and vanilla.

Fold in flour, cocoa powder, and baking soda.

The dough should be soft but manageable.

Press small portions into muffin tins, creating a cup shape.

Bake for around 10 minutes at 175°C.

The cookie cups will firm up as they cool.

The Fun Part: Filling Them

Once slightly cooled, add chocolate chunks into the centre.

Top with marshmallows.

Toast until golden.

The marshmallow melts into the chocolate, creating that classic s’mores moment.

The cookie base keeps everything together, so every bite feels like a handheld dessert.

Little Things That Make A Difference

Use Dark Chocolate

The bitterness balances the marshmallow sweetness.

Don’t Skip The Toast

That golden marshmallow top gives the dessert its signature flavour.

Serve Warm

These are at their best when the chocolate centre is still soft.

Why I Love This Recipe

It feels nostalgic without being childish.

It’s fun enough for parties but easy enough for a random weekend craving.

It’s also one of those desserts where everyone immediately understands what they’re eating.

Chocolate?

Yes.

Cookie?

Yes.

Marshmallow?

Obviously.

There is no wrong answer.
